My Husband {how can I put this?!?!?!?} is fascinated obsessed with The Pioneer Woman – ya know?!? Lee Drummond?!? I’ve been competing with her ever since he laid eyes on her during her first show on the Food Network. Now, typically, I’d be a little jealous, but I’m over it! I can cook her recipes just as well as she can! What’dya sa, Lee? Wanna have a throwdown?? Oh hell, wrong show!
Anyhow, this Spicy Pulled Pork Sandwich recipe is super duper delish and I can’t wait to share it with you!
Ingredients
- Pork Butt or Shoulder (nothing else will do!)
- 20 oz. Dr. Pepper (Coke will work too!)
- 1 onion, quartered
- 1 can Chipotle Peppers in Adobe Sauce
- 1/4 c brown sugar
- salt and pepper to taste
- Hamburger buns
- Turn oven on 275
Place quartered onions on the bottom of your pan or pot, whatever you are using to bake the pork in all day! Place the pork butt/shoulder on top of the onions. Mix brown sugar and pop together and pour on the bottom of the pan, not directly onto the meat. Place the meat into your pan/pot and pour the chipotle peppers on top.
Cover the dish with foil or the proper lid. Flip every 2 hours over a 6 hour period. The meat will be ubber tender. After 6-8 hours remove the pork and shred into your serving bowl.
Now, this is where it gets tricky! The first time you’ll wanna use a few peppers and add more peppers, onions, liquid as you go. I’ve been shredding all the onions and half the peppers in mine which is a perfect heat for us. If you don’t want much heat don’t shred any of the peppers. If you like heat, add all the peppers. Now you can use the juice from the pan, however, use with caution! I like to use 2-3 ladles full and serve warm!
Place your pulled pork on your favorite bun and enjoy! * You can also use a soft tortilla for a taco!
