I’m not one that follows direction….in the kitchen I tend to come up with recipes as I’m cooking or baking. For Mini Me’s 5th Birthday Party at school we were going to make some basic cupcakes, but, decided to fancy them up a bit!
I typically bake from scratch, but, this time I went for the box stuff ’cause ya know this Momma has been short on time! We wanted to make this extra special and I saw some Oreo’s laying on the counter. {hey, don’t judge!} So I decided to get creative and had Mini-Me stick an Oreo in the bottom of the cupcake liners that I had sprayed with Pam Baking!
I then took a ladle full of Betty Crocker Chocolate mix into the cupcake liner and baked 24 cupcakes! They turned out really great! Once the cupcakes cooled we put a little icing on them and some Oreo’s that we munched up in a Ziploc baggie.
Oreo Cupcake Recipe
Ingredients
Box of fav Chocolate Cake Mix (you can use white as well!)
1 Tub WHIPPED icing {ya gotta have the whipped….mmmm?!?}
30 Oreo Cookies – 24 for cupcakes, 6 crushed up for topping
Place Oreo in the bottom of the pre-sprayed cupcake liner. Mix chocolate cake mix according to box. Ladle the cupcake liner 2/3 full and bake as instructed according to the box. Let cupcakes cool. Icing the cupcakes and sprinkle with crushed Oreos….enjoy!

Those look SO good! What a creative idea to make something super special without taking much extra time. I bet they would be good with the white Oreos, too, and yellow or white cake. Or the specialty flavors and strawberry cake mix… the possibilities are endless! Now I’m hungry.
