Biscotti means twice-cooked and, in America, refers to an Italian cookie. Modern biscotti usually contain seeds or nuts like almonds or pistachios. Since biscotti are softer, they pair nicely as an after-dinner dessert, but honestly, I could eat these all day with a glass of cold milk!
This year, why not start a Biscotti Tradition, by making several versions of biscotti to pass out as gifts? Or have all the guests give it a whirl and bring their best rendition of this classic!
Below is the recipe for the biscotti base. After that, you can find all types of biscotti variations to add to the mix.
Basic Biscotti Recipe
- ¼ cup soft butter
- 1 cup white sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
- 2 and 1/3 cups all-purpose flour
- 3 eggs
In a beater, beat eggs, butter, sugar, and vanilla together. Add flour 1 cup at a time with baking soda, baking powder, and salt. Continue to add the remaining flour until well-mixed. Put the bowl in the freezer and chill for half an hour. Place the chilled dough from two logs on a baking sheet. Place in a preheated 350-degree oven for 25-30 minutes. After baking, allow to cool for 20-30 minutes, then slice into wedges. Bake wedges again at the same temp for 5 minutes. Let cool be before dunking in chocolate.
Tips on Baking Biscotti
- Place only 2 logs on a baking sheet
- Make sure to let biscotti cool at least 20-30 minutes before cutting, but don’t wait too long, or they will harden
- Let the biscotti cool completely before adding chocolate or icing
- Cut on an angle for “better looking” biscotti
- If making it for the first time, follow the directions exactly, and do not deviate
- To keep biscotti crisp, store them in an airtight container at room temperature
